As an iOS developer I can maybe correct you regarding the Instagram stories point you mentioned and attributed to the iPhone RAM.
In reality, RAM has nothing to do with that behavior. It's the way iPhone Apps are designed. iOS does not allow the apps to perform any operations apart from a few selected ones like playing music, etc. So when you put your app in the background, iOS essentially freezes the app where you left it and continues from there when you come back.

Telephoto lenses on a proper camera produce far less distortion than a wide angle lens. I think maybe you got that backwards regarding portraits.
